This is the best information I have found but its still missing the info I need.

1988 Mustang
Total Mustangs produced: 211,225
Total GT’s produced: 68,468
GT Hatchbacks: 50,294
GT Convertibles: 18,174

225 HP @ 4000 RPM
300 ft/lb @ 3000 RPM

Not wanting to change a good thing, Ford resumed GT production with no major changes for 1988. Proving its popularity, late model GT production hit its highest mark in 1988 with 68,468 units produced (an increase of 20,929 units over 1987!). The sequential electronic fuel injection 5.0L HO engine continued with its 60mm throttle body, tuned length aluminum intake plenum, 19 lb-hr injectors, E7TE truck heads, roller lifter cam, remote low-restriction air cleaner, and EEC-IV electronics system. Of course, the standard GT handling package was retained including progressive rate springs, 1.3 inch front anti-sway bar, 0.83 inch rear anti-sway bar, gas pressurized struts with rear quadra-shocks and 15x7 inch wheels with uni-directional Goodyear Gatorbacks. This, along with the GT’s stainless steel exhausts teamed up with stainless steel tubular headers and 10.84-inch front brakes, proved to be such a great performance combination that Ford continued GT production virtually unchanged through the end of 1993. The only major mechanical change for 1988 (for California cars only) was the addition of a mass airflow sensor for fuel metering which replaced the speed density system found on all other GT’s.

Externally, the GT (available in both hatchback and convertible models) remained the same, sporting the new “aero” look from 1987 with flush-fitting headlamps, aerodynamic nose, rear wing, round fog lights, louvered taillights, flush rear quarter window, ground effects package and 15x7 inch “Turbine” wheels. Exterior paint combinations included Black, Dark Grey Metallic, Light Grey, Scarlet Red, Cabernet Red, Medium Shadow Blue Metallic, Bright Regatta Blue Metallic, Deep Shadow Blue Metallic and Oxford White. As in 1987, Titanium lower accent paint treatment was also available on the GT at no cost (metallic paints only) along with a red or blue bodyside molding insert stripe.

Inside, the new ergonomic GT design continued with its new dash, instrument panel, climate control knobs, seats, door trim and console from ‘87. Carryover interior trim colors were: Scarlet Red, Medium Grey and Beige. Standard interior features remained the same from 1987: tilt wheel, 7,000 rpm tach, articulated sports seats, interval wipers, swiveling map light, reminder lights for low fuel, low washer fluid, low coolant and “check oil”, center console, driver’s foot rest/ support and brake and accelerator pedals positioned to allow heel-and -toe downshifting. New for the 1988 GT were the optional leather articulated sport seats featuring white and red, white and blue, or white and grey leather (convertibles only). Other GT options were power locks and windows, speed control, dual remote mirrors, air conditioning, sunroof, T-tops, premium sound with graphic equalizer, rear defrost and electronic AM/FM stereo with cassette. T-top production was discontinued early in the 1988 Mustang model year.

The Mustang, spearheaded by the GT, was so successful in 1987 and 1988 that Ford decided to continue production through at least 1993 and scrapped plans to call its Mazda-based "Probe" the "Mustang IV".

not sure where to find that but I know when you purchase a marti report there are some interesting stats on the bottom right such as stuff like 23 of 500 had a hood scoop or something like that. There may be a stat for T-tops but not sure.
